Weight Watcher’s Lemon – Mint Roasted Carrots

2 tsp lemon zest and 1/4 c fresh lemon juice
2 Tbs honey
3/4 tsp salt and 1/4 tsp pepper
12 medium uncooked carrots, peeled
3 Tbs fresh mint leaves, chopped
Pre-heat oven to 400 degrees. Spray cooking sheet with cooking spray and lay out carrots.
Mix lemon zest, juice, honey, salt and pepper. Drizzle over carrots. Roast carrots for 20 minutes or until fork tender. Sprinkle mint over the carrots!
Review: I saw this recipe featured on the WeWa website, and I just HAD to try them. I immediately went to the farmer’s market to buy carrots so I could make this recipe that night, and I wasn’t disappointed. They rocked! The tradeoff for some zippy carrots? High Points+ values for a side/veggie. Each carrot equals 1 P+, which is pretty expensive, but I thought it was worth it. The carrots are shown above with zucchini boats and grilled balsamic pork loin.
